Zesty Lemon Loaf
Ingredients
- ½ cup butter
- 1 cup sugar
- 2 eggs
- ½ cup milk
- 1½ cups flour
- 1 tsp baking powder
- ½ tsp salt
- Rind of 1 lemon
- Glaze
- Juice of 1 lemon
- ¼ cup icing sugar
Instructions
- Preheat the oven to 350°F.
- Cream together butter and sugar until smooth and fluffy.
- Add each egg, beating until combined.
- In a separate bowl, sift together flour, baking powder, salt and lemon rind.
- Add the flour mixture to the bowl with the wet ingredients and mix until just combined and smooth.
- Pour into a well greased 9 x 4 baking pan.
- Bake for 55 to 60 minutes or until the tops bounce up lightly when touched.
- Cool on a wire rack.
- Mix together lemon juice and sugar and whisk until smooth and runny.
- Once the loaf has cooled, pour the glaze on top.
