Pecan Sandies
Ingredients
- ½ cup of butter, softened
- ½ cup vegetable oil
- ½ cup sugar
- ½ cup icing sugar
- 1 egg
- ½ tsp vanilla
- 2 cups all-purpose flour
- ½ tsp baking soda
- ½ tsp cream of tartar
- ½ tsp salt
- 1 cup chopped pecans
- ½ cup white sugar for decoration
Instructions
- Preheat the oven to 375°F.
- In a large bowl or in a stand mixer, cream together butter, oil, ½ cup of sugar and icing sugar until smooth.
- Beat in the egg.
- Add in vanilla and mix until incorporated.
- In a separate bowl, sift together, flour, baking soda, cream of tartar and salt.
- Add the dry ingredients into the wet ingredients and mix until combined.
- Add the pecans until just mixed in.
- Roll the dough into 1 inch balls and roll each ball in the remaining ½ cup of sugar.
